The Perfect Low-Carb Strawberry Shortcake
A Light, Cloud-Soft Celebration Cake with a Gentle Mochi Bounce
This strawberry shortcake started as a simple birthday experiment using our Mochi Castella Cake recipe.
The crumb stayed soft and delicate, yet sturdy enough to support three layers of whipped cream and fresh strawberries. Every bite felt airy and cloud-like, with that subtle mochi-inspired springiness that makes our baking mix so unique.
Unlike traditional strawberry shortcake, this cake isn’t overly sweet or heavy. The cake itself carries a gentle lemon aroma, the whipped cream is lightly sweetened, and the strawberries bring natural freshness to every bite.
It was one of those desserts that quietly disappeared slice by slice because everyone kept going back for “just one more bite.”
Finally, a low-carb version that tastes like the real deal.
What You Need to Make Low-Carb Strawberry Shortcake
- For the Cake
- 255g of our Mochi Multi-Purpose Mix (Original Cloud flavor)
- 120g whole milk (we use A2 Milk in this recipe. For a lower-carb option, try Fairlife Milk with 50% less sugar)
- 2 large egg (50g-55g each)
- 50g avocado oil
💡 Any neutral-flavored cooking oil will work, but avoid strongly flavored oils, as it may leave an overpowering taste. - 4g freshly grated lemon zest (optional, but highly recommended)
💡 While optional, fresh lemon zest truly takes this cake to the next level. Its bright citrus aroma balances the richness of the whipped cream, enhances the fresh strawberry flavor, and gives the entire cake a lighter, more refreshing finish.
- For the Whipped Cream
- 1 pint heavy whipping cream
- 35g powdered allulose
- 1 teaspoon vanilla extract
- For Assembly
- Fresh strawberries
- Wash and dry strawberries thoroughly
- Tools
- Mixing bowl
- Hand mixer or whisk
- Silicone spatula
- Kitchen scale (essential for true mochi texture!)
- 6-inch nonstick cake pan — a metal pan works best for even heat conduction
- Layer cake slicer (optional) — great for perfectly even layers, though a serrated knife works beautifully too
How to Make Low-Carb Strawberry Shortcake at Home
1. Preheat the Oven
- Preheat your oven to 325°F (165°C) convection with fan on.
If using a conventional oven without a fan, bake at 350°F (175°C).
2. Prepare the Batter
- In a mixing bowl, combine 255g Mochi Multi-Purpose Mix, 2 large eggs, and 120g milk.
💡 Use a kitchen scale to get accurate measurements. - Using a hand mixer, beat on low speed for a few minutes, until smooth and no lumps.
- Add 4g freshly grated lemon zest and mix briefly to incorporate.
- Add in 50g avocado oil. Beat on low speed until the batter and oil are fully incorporated—but don’t over-mix.
3. Rest the Batter
- Lightly grease a 6-inch nonstick metal cake pan (or line the pan with parchment paper).
- Pour the batter into the pan and gently tap it on the counter several times to release any trapped air bubbles.
- Allow the batter to rest at room temperature for 20–30 minutes.
4. Bake
- Bake for approximately:
- 60 minutes at 325°F convection (fan on), or
- 50–55 minutes at 350°F conventional (no fan)
💡 Cover the top with foil + rotate the pan at the 35-minute mark to prevent the top from browning too quickly or unevenly.
- The cake is ready when:
- A toothpick inserted into the center comes out clean
- The top turns a warm, even golden color
💡 Every oven behaves differently. Begin checking for doneness near the end of the baking time.
5. Cool Completely
- Once baking is complete, crack the oven door open and let the cake sit inside for about 5 minutes to reduce temperature shock.
- Remove pan from the oven and allow the cake to cool completely.
6. Assemble the Strawberry Shortcake
- Once the cake has cooled down, slice the cake horizontally into three even layers.
- Spread whipped cream between each layer and add fresh sliced strawberries.
- For best texture, use whipped cream beaten between soft peaks and stiff peaks
💡 You’re looking for a whipped cream that won’t slide or ooze from the cake layers, while still melting softly on the palate.
- For best texture, use whipped cream beaten between soft peaks and stiff peaks
- Finish with a final layer of whipped cream and decorate with whole strawberries.
Soft, moist, and gently springy—with a subtle mochi-like pull.
Tips for Success
- Let the batter rest – Let it rest at room temperature for 20–30 minutes before baking.
👉🏻 This resting time allows the structure to set naturally, resulting in a finer crumb and that signature soft, springy bite. - Use room-temperature wet ingredient – Cold ingredients can prevent the batter from emulsifying smoothly and may affect the final texture.
- Use a metal loaf pan for best results – A metal pan ensures even heat conduction. If using a silicone pan, extend the baking time by about 5-10 minutes. Use the toothpick test to check for doneness.
- Do not over-mix – Mix just until everything is fully incorporated. Over-mixing can tighten the structure and reduce that delicate mochi-like pull.
- Dry your strawberries thoroughly – After washing the strawberries, pat them completely dry with paper towels. Excess moisture can dilute the whipped cream and make the cake saggy.
- Add lemon zest – If you’re making this for a special occasion, don’t skip the lemon zest. It adds brightness, fragrance, and a subtle sophistication that elevates the entire cake.

Q2: Can I use 2% milk?
Yes, but whole milk produces a slightly richer mouthfeel and a touch more tenderness. For a lower-carb option, try Fairlife Milk with 50% less sugar.
Q3: Does this mix contain nuts?
Nope—our baking mix is 100% nut-free!
Q4: Is this cake very sweet?
No, this cake is lightly sweetened. If you prefer a sweeter profile, you can adjust the batter with a small amount of monk fruit or allulose.
Q5: Can I use frozen strawberries?
Fresh strawberries are highly recommended. Frozen berries release too much moisture once thawed and can make the layers watery.
Q6: Can I turn this into an ice cream cake?
Absolutely. One of the most surprising discoveries was how well it performs when frozen. Because of its mochi-inspired structure, the cake stays pleasantly soft and slightly chewy even after freezing.
Q7: How do I store leftovers?
Cover any leftovers in plastic wrap and store up to 5 days in the fridge.
